Ingredients

  • 1 lb ground beef
  • 1 cup diced onion
  • 1 cup diced celery
  • 1 cup diced carrots
  • 3 cups chicken broth
  • 4 cups peeled and diced potatoes
  • ¼ cup all-purpose flour
  • 2 cups milk
  • 2 cups shredded cheddar cheese
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. In a large pot, cook the ground beef over medium heat until browned. Drain any excess fat.
  2. Add the diced onion, celery, and carrots to the pot. Cook until the vegetables are tender, about 5-7 minutes.
  3. Stir in the chicken broth and diced potatoes. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 10-12 minutes.
  4. In a small bowl, whisk together the flour and milk until smooth. Gradually stir into the soup. Cook and stir until the soup is thickened and bubbly.
  5. Stir in the shredded cheddar cheese, salt, and black pepper. Cook until the cheese is melted and the soup is heated through.
  6. Serve hot and enjoy!
