Cheesy Amish Breakfast Casserole

- 1 lb Bacon cooked and crumbled
- 1 cup Onion chopped
- 6 Eggs beaten
- 4 cups Frozen Hash Browns thawed
- 2 cups Cheddar Cheese shredded
- 1 ½ cups Cottage Cheese
- 1 ¼ cups Swiss Cheese shredded
Preheat oven to 350°F (175°C).
In a large bowl, combine the bacon, onions, hash browns, and cheeses.
In another bowl, whisk the eggs. Pour over the hash brown mixture and stir to combine.
Transfer to a greased 9x13 inch baking dish.
Bake in the preheated oven until a knife inserted near the center comes out clean, about 45 minutes.
Let stand for 10 minutes before serving.
