Ingredients

  • 4 cups zucchini, sliced
  • 1 cup shredded cheddar cheese
  • 0.5 cup grated Parmesan cheese
  • 0.5 cup breadcrumbs
  • 0.25 cup chopped onion
  • 2 cloves garlic, minced
  • 0.25 cup milk
  • 2 tablespoon olive oil
  • Salt and pepper to taste

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add onions and garlic, sauté until fragrant.
  3. Add zucchini slices, cook until tender.
  4. In a bowl, mix cooked zucchini, cheddar cheese, Parmesan cheese, breadcrumbs, milk, salt, and pepper.
  5. Transfer mixture to a greased baking dish.
  6. Bake for 25-30 minutes or until golden brown on top.
