Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded carrots
  • 1 cup spinach, chopped
  • 2 cups cooked chicken, shredded
  • 1 package gnocchi
  • to taste salt and pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add diced onion and cook until translucent.
  2. Add minced garlic and cook for another minute.
  3. Pour in chicken broth and bring to a simmer.
  4. Add heavy cream, shredded carrots, and spinach. Simmer for 10 minutes.
  5. Add shredded chicken and gnocchi. Cook until gnocchi float to the top, about 3-5 minutes.
  6. Season with salt and pepper to taste. Serve hot.
