Chicken and Gnocchi Soup

Main Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded carrots
- 1 cup spinach, chopped
- 2 cups cooked chicken, shredded
- 1 package gnocchi
- to taste salt and pepper
Heat olive oil in a large pot over medium heat. Add diced onion and cook until translucent.
Add minced garlic and cook for another minute.
Pour in chicken broth and bring to a simmer.
Add heavy cream, shredded carrots, and spinach. Simmer for 10 minutes.
Add shredded chicken and gnocchi. Cook until gnocchi float to the top, about 3-5 minutes.
Season with salt and pepper to taste. Serve hot.
