Main Ingredients
- 1 tablespoon Olive oil
- 1 Onion, chopped
- 2 cloves Garlic, minced
- 2 Carrots, sliced
- 2 stalks Celery, sliced
- 1 lb Chicken breast, diced
- 6 cups Chicken broth
- 1 cup Rice
- 1 teaspoon Salt
- ½ teaspoon Black pepper
- 1 teaspoon Dried thyme
- 1 cup Frozen peas
- 2 tablespoon Fresh parsley, chopped
Heat olive oil in a large pot over medium heat.
Add onion, garlic, carrots, and celery. Cook until softened, about 5 minutes.
Add chicken and cook until browned.
Pour in chicken broth and bring to a boil.
Add rice, salt, pepper, and thyme. Reduce heat and simmer for 20-25 minutes.
Stir in frozen peas and cook for another 5 minutes.
Garnish with fresh parsley before serving.
