Ingredients 

Main Ingredients

  • 1 tablespoon vegetable oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 inch piece ginger, minced
  • 1 breast chicken, cooked and shredded
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 4 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch mixed with 2 tablespoon water
  • 1 egg, beaten
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions 

  1. Heat oil in a pot over medium heat. Add onion, garlic, and ginger. Sauté until fragrant.
  2. Add shredded chicken and corn kernels. Stir well.
  3. Pour in chicken broth and soy sauce. Bring to a boil.
  4. Reduce heat and simmer for 10 minutes.
  5. Stir in cornstarch mixture to thicken the soup.
  6. Slowly pour in the beaten egg while stirring the soup to create egg ribbons.
  7. Season with salt and pepper to taste.
  8. Garnish with chopped green onions before serving.
