Ingredients 

Main Ingredients

  • 1 tablespoon Olive oil
  • 1 cup Onion, diced
  • 2 cloves Garlic, minced
  • 1 lb Chicken breast, cooked and shredded
  • 4 cups Chicken broth
  • 1 cup Red enchilada sauce
  • 1 can Black beans, drained and rinsed
  • 1 can Corn, drained
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black pepper to taste

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onions and cook until translucent, about 5 minutes.
  3. Add minced garlic and cook for another minute.
  4. Add shredded chicken, chicken broth, enchilada sauce, black beans, corn, cumin, chili powder, salt, and pepper. Stir to combine.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Serve hot, garnished with your favorite toppings like cheese, sour cream, or avocado.
