Main Ingredients
- 4 pieces boneless, skinless chicken breasts
- 2 large potatoes, cubed
- 1 piece green bell pepper, sliced
- 1 piece red bell pepper, sliced
- 1 piece yellow bell pepper, sliced
- 1 large onion, sliced
- 4 cloves garlic, minced
- 1 cup white wine
- 1 cup chicken broth
- 0.5 cup sliced hot cherry peppers
- 0.25 cup olive oil
- Salt and pepper to taste
Preheat oven to 375°F (190°C).
Season chicken breasts with salt and pepper.
In a large skillet, heat olive oil over medium-high heat. Brown chicken on both sides.
Remove chicken and set aside.
In the same skillet, add potatoes, bell peppers, onion, and garlic. Cook until vegetables are tender.
Add white wine, chicken broth, and hot cherry peppers. Bring to a boil.
Return chicken to the skillet. Spoon some sauce over the chicken.
Transfer skillet to the oven and bake for 25-30 minutes, until chicken is cooked through.
