Ingredients 

Main Ingredients

  • 1 lb Chicken Breast boneless, skinless
  • 8 cups Chicken Broth
  • 2 Carrots sliced
  • 2 Celery Stalks sliced
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 8 oz Egg Noodles
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black Pepper to taste
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Dried Parsley

Instructions 

  1. 1. In a large pot, heat a bit of oil over medium heat. Add the chopped onion, garlic, carrots, and celery. Cook until softened, about 5 minutes.
  2. 2. Add the chicken breast to the pot and pour in the chicken broth. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the chicken is cooked through.
  3. 3. Remove the chicken from the pot and shred it with two forks. Return the shredded chicken to the pot.
  4. 4. Add the egg noodles, salt, pepper, thyme, and parsley to the pot. Cook for another 10 minutes, or until the noodles are tender.
  5. 5. Taste and adjust seasoning if necessary. Serve hot.
