Ingredients 

Main Ingredients

  • 2 tablespoon vegetable oil
  • 1 lb chicken breast, thinly sliced
  • 4 cups chicken broth
  • 2 packs ramen noodles
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoon soy sauce
  • 1 tablespoon mirin
  • 1 cup sliced mushrooms
  • 2 cups baby spinach
  • 2 soft-boiled eggs, halved
  • 2 stalks green onions, sliced
  • 1 teaspoon sesame oil

Instructions 

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chicken slices and cook until browned. Remove and set aside.
  3. In the same pot, add garlic and ginger. Sauté for 1-2 minutes.
  4. Pour in the chicken broth, soy sauce, and mirin. Bring to a boil.
  5. Add the ramen noodles and cook according to package instructions.
  6. Return the cooked chicken to the pot along with mushrooms and spinach. Cook for another 2-3 minutes.
  7. Serve the ramen in bowls, topped with soft-boiled eggs, green onions, and a drizzle of sesame oil.
