Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 lb chicken breast shredded
  • 1 can chipotle peppers in adobo sauce
  • 1 cup tomato sauce
  • 1 medium onion sliced
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • to taste salt and pepper
  • 8 small tortillas
  • 1 cup fresh cilantro chopped
  • 1 cup crumbled queso fresco

Instructions 

  1. Heat olive oil in a skillet over medium heat.
  2. Add sliced onions and cook until translucent.
  3. Add minced garlic, oregano, and cumin. Cook for another minute.
  4. Blend chipotle peppers and tomato sauce until smooth.
  5. Add the blended sauce to the skillet and bring to a simmer.
  6. Add shredded chicken to the skillet and mix well. Cook for 10 minutes.
  7. Season with salt and pepper to taste.
  8. Warm tortillas in a separate pan.
  9. Assemble tacos by adding chicken tinga, cilantro, and queso fresco to each tortilla.
