Main Ingredients
- 1 can Chickpeas drained and rinsed
- 1 Small Red Onion finely chopped
- 1 Cucumber diced
- 1 Tomato diced
- ¼ cup Fresh Parsley chopped
- 2 tablespoon Olive Oil
- 1 tablespoon Lemon Juice
- ½ teaspoon Salt
- ¼ teaspoon Black Pepper
- 4 Tortillas
1. In a mixing bowl, mash the chickpeas with a fork.
2. Add the red onion, cucumber, tomato, and parsley. Mix well.
3. Drizzle with olive oil and lemon juice. Season with salt and pepper. Toss to combine.
4. Spoon the chickpea salad onto the tortillas and wrap them up.
