Ingredients

  • 2 cups Chickpeas cooked or canned, drained and rinsed
  • 2 tablespoon Olive Oil
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Coriander
  • 1 teaspoon Paprika
  • 0.5 teaspoon Ground Turmeric
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black Pepper
  • 4 Pita Breads or wraps
  • 1 cup Lettuce shredded
  • 1 cup Tomatoes diced
  • 0.5 cup Cucumber diced
  • 0.25 cup Red Onion thinly sliced
  • 0.5 cup Tahini Sauce

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. In a mixing bowl, combine chickpeas, olive oil, cumin, coriander, paprika, turmeric, salt, and black pepper. Toss to coat evenly.
  3. Spread the chickpeas on a baking sheet and roast for 20 minutes, stirring halfway through, until crispy.
  4. Warm the pita breads or wraps in the oven for a few minutes.
  5. Assemble the wraps by layering lettuce, tomatoes, cucumber, red onion, and roasted chickpeas. Drizzle with tahini sauce.
  6. Fold the wraps and serve immediately.
