Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 can diced tomatoes (14.5 oz)
  • 1 can coconut milk (13.5 oz)
  • 1 can chickpeas, drained and rinsed (15 oz)
  • 2 cups mixed vegetables (carrots, bell peppers, peas) chopped
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 1 handful fresh cilantro chopped, for garnish

Instructions 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Stir in the garlic and ginger, and cook for another 2 minutes.
  4. Add the curry powder, ground cumin, and ground coriander. Cook for 1 minute to toast the spices.
  5. Pour in the diced tomatoes and coconut milk. Stir to combine.
  6. Add the chickpeas and mixed vegetables. Bring to a simmer.
  7. Season with salt and black pepper to taste. Simmer for 20 minutes, until the vegetables are tender.
  8. Garnish with fresh cilantro before serving.
