- 1 can Black Beans drained and rinsed
- 1 tablespoon Olive Oil
- 1 teaspoon Chipotle Powder
- 1 teaspoon Cumin
- 1 teaspoon Garlic Powder
- 8 pieces Taco Shells
- 1 cup Shredded Lettuce
- 1 cup Diced Tomatoes
- ½ cup Sour Cream
- ½ cup Shredded Cheese
1. Heat olive oil in a skillet over medium heat.
2. Add black beans, chipotle powder, cumin, and garlic powder. Cook for 5-7 minutes, stirring occasionally.
3. Warm taco shells according to package instructions.
4. Fill taco shells with black bean mixture, then top with lettuce, tomatoes, sour cream, and shredded cheese.
