Ingredients 

Crust

  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter cold, cut into pieces
  • ¼ cup sugar
  • 1 pinch salt
  • 1 egg yolk

Filling

  • 1 cup heavy cream
  • 8 oz dark chocolate chopped
  • 1 teaspoon vanilla extract
  • 1 cup fresh raspberries

Instructions 

  1. 1. Preheat oven to 350°F (175°C).
  2. 2. In a bowl, mix flour, sugar, and salt. Add butter and mix until crumbly. Add egg yolk and mix until dough forms.
  3. 3. Press dough into tart pan. Bake for 20 minutes or until golden. Let cool.
  4. 4. Heat cream until simmering. Pour over chocolate and let sit for 5 minutes. Stir until smooth. Add vanilla.
  5. 5. Pour chocolate filling into cooled crust. Top with raspberries. Chill for at least 1 hour before serving.
