Ingredients 

Crust

  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter cold and cubed
  • ¼ cup sugar
  • 1 egg yolk
  • 2 tablespoon cold water

Filling

  • 1 cup heavy cream
  • 8 oz dark chocolate chopped
  • 2 tablespoon unsalted butter room temperature
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine flour and sugar. Cut in the cold butter until the mixture resembles coarse crumbs.
  3. Add egg yolk and cold water, mix until the dough comes together. Press into a tart pan.
  4. Bake the crust for 15 minutes. Let it cool.
  5. For the filling, heat the cream until just boiling. Pour over the chopped chocolate and let sit for a minute.
  6. Whisk until smooth, then add butter and vanilla extract. Pour into the cooled crust.
  7. Chill in the fridge for at least 2 hours before serving.
