- 8 oz Chorizo
- 4 Eggs beaten
- ½ cup Cheddar Cheese shredded
- ¼ cup Salsa fresh
- 4 Tortillas small
1. Cook the chorizo in a skillet over medium heat until fully cooked, about 8-10 minutes.
2. In a mixing bowl, beat the eggs and then pour them into the skillet with the chorizo. Scramble until fully cooked.
3. Warm the tortillas in a separate skillet or microwave.
4. Divide the chorizo and egg mixture among the tortillas. Top with shredded cheese and fresh salsa.
5. Serve immediately and enjoy!
