  • 6 cups potatoes, peeled and cubed
  • 1 cup mayonnaise
  • 1 tablespoon yellow mustard
  • 1 cup celery, chopped
  • ½ cup onion, chopped
  • ½ cup dill pickle relish
  • 4 hard-boiled eggs, chopped
  • to taste salt and pepper

Instructions 

  1. 1. Boil the potatoes in a large pot of salted water until tender, about 10 minutes. Drain and let cool.
  2. 2. In a large mixing bowl, combine the mayonnaise, mustard, celery, onion, relish, and chopped eggs.
  3. 3. Add the cooled potatoes to the bowl and mix gently to combine. Season with salt and pepper to taste.
  4. 4. Chill in the refrigerator for at least 1 hour before serving.
