Ingredients 

Main Ingredients

  • 1 tablespoon vegetable oil
  • 1 lb chicken breast, cut into cubes
  • 1 cup coconut milk
  • 2 tablespoon curry powder
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup chicken broth
  • 1 tablespoon lime juice
  • 1 cup fresh cilantro, chopped

Instructions 

  1. 1. Heat oil in a large skillet over medium heat.
  2. 2. Add chicken and cook until browned, about 5-7 minutes.
  3. 3. Remove chicken and set aside.
  4. 4. In the same skillet, add onion, garlic, and ginger. Cook until onion is translucent.
  5. 5. Add curry powder and cook for another minute.
  6. 6. Pour in coconut milk and chicken broth. Bring to a simmer.
  7. 7. Return chicken to the skillet. Simmer for 15 minutes, or until chicken is cooked through.
  8. 8. Stir in lime juice and fresh cilantro before serving.
