Ingredients 

Main Ingredients

  • 2 tablespoon Vegetable Oil
  • 1 large Onion, chopped
  • 3 cloves Garlic, minced
  • 1 tablespoon Ginger, minced
  • 2 tablespoon Curry Powder
  • 1 can Coconut Milk
  • 2 cups Vegetable Broth
  • 2 cups Mixed Vegetables carrots, bell peppers, peas
  • to taste Salt and Pepper
  • 1 tablespoon Lime Juice
  • 1 handful Fresh Cilantro, chopped

Instructions 

  1. 1. Heat the oil in a large pot over medium heat.
  2. 2. Add the chopped onion and sauté until translucent.
  3. 3. Stir in the garlic and ginger, cook for another minute.
  4. 4. Add the curry powder and cook for 2 minutes, stirring constantly.
  5. 5. Pour in the coconut milk and vegetable broth, bring to a simmer.
  6. 6. Add the mixed vegetables and cook until tender, about 15 minutes.
  7. 7. Season with salt and pepper to taste.
  8. 8. Stir in lime juice and garnish with fresh cilantro before serving.
