Ingredients

  • 2 cups Coconut Milk
  • 1 tablespoon Curry Paste
  • 2 cups Vegetable Broth
  • 1 cup Diced Vegetables (carrots, bell peppers, etc.)
  • 1 tablespoon Soy Sauce
  • 1 teaspoon Ginger (grated)
  • 2 cloves Garlic (minced)
  • to taste Salt and Pepper

Instructions 

  1. 1. In a pot, heat a bit of oil and sauté the garlic and ginger until fragrant.
  2. 2. Add the curry paste and cook for another minute.
  3. 3. Pour in the coconut milk and vegetable broth, and bring to a simmer.
  4. 4. Add the diced vegetables and cook until they are tender.
  5. 5. Stir in the soy sauce, salt, and pepper. Adjust seasoning to taste.
  6. 6. Serve hot and enjoy!
