Ingredients 

Main Ingredients

  • 1 cup red lentils
  • 1 can coconut milk
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 tablespoon ginger grated
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 4 cups vegetable broth
  • to taste salt
  • to taste black pepper
  • 1 tablespoon olive oil
  • 1 handful fresh cilantro chopped, for garnish

Instructions 

  1. 1. Heat the olive oil in a pot over medium heat. Add the chopped onion and cook until translucent.
  2. 2. Add the minced garlic and grated ginger, cook for another minute.
  3. 3. Stir in the turmeric and cumin, cook for 30 seconds until fragrant.
  4. 4. Add the red lentils, vegetable broth, and coconut milk. Bring to a boil.
  5. 5. Reduce heat to low and simmer for 20-25 minutes, until the lentils are tender.
  6. 6. Season with salt and black pepper to taste.
  7. 7. Garnish with fresh cilantro before serving.
