Ingredients 

Base

  • 1 cup all-purpose flour
  • ½ cup unsweetened shredded coconut
  • ¼ cup sugar
  • ½ cup butter, melted

Filling

  • 1 cup sugar
  • 2 tablespoon all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 2 large eggs beaten
  • ½ cup lime juice freshly squeezed
  • 1 tablespoon lime zest

Instructions 

  1. Preheat oven to 350°F (175°C). Grease a baking pan.
  2. In a mixing bowl, combine flour, shredded coconut, and sugar for the base. Stir in melted butter until well combined. Press mixture into the prepared baking pan.
  3. Bake for 10-12 minutes or until lightly golden. Remove from oven and set aside.
  4. In another bowl, whisk together sugar, flour, baking powder, and salt for the filling. Add beaten eggs, lime juice, and lime zest. Mix until smooth.
  5. Pour filling over the baked base. Return to oven and bake for an additional 15 minutes or until set.
  6. Allow to cool completely before cutting into bars. Enjoy!
