Ingredients 

Main Ingredients

  • 3 cups sweetened shredded coconut
  • cup sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 2 large egg whites room temperature
  • ¼ teaspoon salt
  • 1 cup semi-sweet chocolate chips for dipping

Instructions 

  1. Preheat oven to 325°F (163°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine shredded coconut, sweetened condensed milk, and vanilla extract.
  3. In a separate bowl, beat egg whites and salt until stiff peaks form. Gently fold into the coconut mixture.
  4. Drop tablespoon-sized mounds of the mixture onto the prepared baking sheet.
  5. Bake for 20-25 minutes, or until the edges are golden brown. Let cool completely.
  6. In a microwave-safe bowl, melt chocolate chips in 30-second intervals, stirring in between, until smooth.
  7. Dip the bottoms of the cooled macaroons into the melted chocolate and place back on the parchment paper to set.
