  • 1 cup Mango, diced
  • 2 tablespoon Maple Syrup or any sweetener of choice
  • 1 teaspoon Vanilla Extract

Instructions 

  1. In a mixing bowl, whisk together coconut milk, chia seeds, maple syrup, and vanilla extract.
  2. Let the mixture sit for about 10 minutes, then whisk again to prevent clumping.
  3. Cover the bowl and refrigerate for at least 2 hours or overnight.
  4. Before serving, stir the pudding and divide into serving bowls. Top with diced mango.
