Ingredients

  • 1 cup Coconut Milk
  • 1 cup Mango Puree
  • ¼ cup Sugar
  • 2 tablespoon Cornstarch
  • ½ teaspoon Vanilla Extract

Instructions 

  1. In a saucepan, combine coconut milk and sugar. Heat over medium heat until the sugar dissolves.
  2. In a small bowl, mix cornstarch with a little water to make a slurry. Add to the saucepan.
  3. Cook, stirring constantly, until the mixture thickens. Remove from heat and stir in vanilla extract.
  4. Let the mixture cool slightly, then fold in the mango puree.
  5. Pour the pudding into serving glasses and refrigerate for at least 2 hours before serving.
