Ingredients 

Main Ingredients

  • 500 g Green beans trimmed
  • 1 cup Cherry tomatoes halved
  • ¼ cup Red onion thinly sliced
  • 2 tablespoon Olive oil
  • 1 tablespoon Lemon juice freshly squeezed
  • 1 teaspoon Dijon mustard
  • 1 clove Garlic minced
  • to taste Salt
  • to taste Black pepper

Instructions 

  1. 1. Bring a pot of salted water to a boil. Add the green beans and cook for 3-4 minutes until tender-crisp.
  2. 2. Drain the green beans and immediately plunge them into a bowl of ice water to stop the cooking process. Drain again.
  3. 3. In a large mixing bowl, combine the green beans, cherry tomatoes, and red onion.
  4. 4. In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, garlic, salt, and pepper.
  5. 5. Pour the dressing over the vegetables and toss to coat evenly.
  6. 6. Chill in the refrigerator for at least 30 minutes before serving.
