Coq Au Vin
A classic French dish made with chicken, red wine, and vegetables.

Main Ingredients
- 1 whole Chicken cut into pieces
- 2 cups Red Wine
- 1 cup Chicken Broth
- 4 slices Bacon diced
- 1 large Onion chopped
- 2 cloves Garlic minced
- 2 tablespoon Flour
- 1 cup Mushrooms sliced
- 2 tablespoon Tomato Paste
- 1 teaspoon Thyme dried
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
1. Cook bacon in a Dutch oven until crispy. Remove and set aside.
2. Brown chicken pieces in the bacon fat. Remove and set aside.
3. Sauté onions and garlic in the same pot until softened.
4. Stir in flour and cook for 1 minute.
5. Add wine, broth, tomato paste, thyme, salt, and pepper. Bring to a boil.
6. Return chicken and bacon to the pot. Simmer for 1.5 hours.
7. Add mushrooms and cook for another 30 minutes.
