Ingredients 

Main Ingredients

  • 2 cups Corn kernels fresh or frozen
  • 1 cup Black beans rinsed and drained
  • 3 Avocados peeled, pitted, and mashed
  • 1 Tomato diced
  • ¼ cup Red onion finely chopped
  • 1 Jalapeño seeded and finely chopped
  • ¼ cup Cilantro chopped
  • 2 tablespoon Lime juice
  • ½ teaspoon Salt
  • ¼ teaspoon Black pepper

Instructions 

  1. In a mixing bowl, combine the mashed avocados, corn, black beans, tomato, red onion, jalapeño, and cilantro.
  2. Add lime juice, salt, and black pepper. Mix well.
  3. Serve immediately or refrigerate for later.
