Ingredients 

Main Ingredients

  • 1 cup Corn kernels fresh or frozen
  • 1 cup Zucchini grated
  • ½ cup All-purpose flour
  • 1 large Egg beaten
  • ¼ cup Green onions chopped
  • ¼ cup Parmesan cheese grated
  • ½ teaspoon Salt
  • ¼ teaspoon Black pepper
  • 2 tablespoon Olive oil for frying

Instructions 

  1. In a large bowl, combine corn, zucchini, flour, egg, green onions, Parmesan, salt, and pepper. Mix well.
  2. Heat olive oil in a frying pan over medium heat.
  3. Scoop 2 tablespoons of the mixture into the pan and flatten slightly. Cook for 2-3 minutes on each side until golden brown.
  4. Remove fritters from the pan and drain on paper towels. Serve warm.
