Corn Zucchini Fritters

Main Ingredients
- 1 cup Corn kernels fresh or frozen
- 1 cup Zucchini grated
- ½ cup All-purpose flour
- 1 large Egg beaten
- ¼ cup Green onions chopped
- ¼ cup Parmesan cheese grated
- ½ teaspoon Salt
- ¼ teaspoon Black pepper
- 2 tablespoon Olive oil for frying
In a large bowl, combine corn, zucchini, flour, egg, green onions, Parmesan, salt, and pepper. Mix well.
Heat olive oil in a frying pan over medium heat.
Scoop 2 tablespoons of the mixture into the pan and flatten slightly. Cook for 2-3 minutes on each side until golden brown.
Remove fritters from the pan and drain on paper towels. Serve warm.
