Main Ingredients
- 1 lb Fresh crabmeat picked over for shells
- 2 tablespoon Butter
- 1 cup Heavy cream
- 2 cups Fish stock
- 1 cup Tomato puree
- 1 teaspoon Salt to taste
- ½ teaspoon Black pepper freshly ground
- 1 tablespoon All-purpose flour
- 1 tablespoon Sherry optional
Melt the butter in a large pot over medium heat.
Add the flour and whisk continuously for about 2 minutes to create a roux.
Slowly add the fish stock while whisking to avoid lumps.
Add the tomato puree and bring to a simmer.
Stir in the heavy cream, salt, and pepper. Simmer for 10 minutes.
Add the crabmeat and cook for another 5 minutes.
If using, stir in the sherry just before serving.
Blend the bisque until smooth, if desired. Serve hot.
