Ingredients 

Main Ingredients

  • 1 lb Fresh crabmeat picked over for shells
  • 2 tablespoon Butter
  • 1 cup Heavy cream
  • 2 cups Fish stock
  • 1 cup Tomato puree
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black pepper freshly ground
  • 1 tablespoon All-purpose flour
  • 1 tablespoon Sherry optional

Instructions 

  1. Melt the butter in a large pot over medium heat.
  2. Add the flour and whisk continuously for about 2 minutes to create a roux.
  3. Slowly add the fish stock while whisking to avoid lumps.
  4. Add the tomato puree and bring to a simmer.
  5. Stir in the heavy cream, salt, and pepper. Simmer for 10 minutes.
  6. Add the crabmeat and cook for another 5 minutes.
  7. If using, stir in the sherry just before serving.
  8. Blend the bisque until smooth, if desired. Serve hot.
