Cranberry Orange Oatmeal Cookies

- 1 cup Butter softened
- 1 cup Brown Sugar packed
- ½ cup Granulated Sugar
- 2 Eggs large
- 1 teaspoon Vanilla Extract
- 1 tablespoon Orange Zest freshly grated
- 1 ½ cups All-Purpose Flour
- 1 teaspoon Baking Soda
- ½ teaspoon Salt
- 3 cups Old-Fashioned Oats
- 1 cup Dried Cranberries
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
Beat in the eggs one at a time, then stir in the vanilla extract and orange zest.
In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this to the wet mixture, mixing until just combined.
Stir in the oats and dried cranberries until evenly distributed.
Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.
Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
