Ingredients

  • 2 cups all-purpose flour
  • ¼ cup sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, cold and cubed
  • 1 cup fresh cranberries, chopped
  • 1 tablespoon orange zest
  • cup heavy cream
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Cut in the cold, cubed butter until the mixture resembles coarse crumbs.
  4. Stir in the chopped cranberries and orange zest.
  5. In a small bowl, whisk together the heavy cream and vanilla extract. Add to the dry ingredients and stir until just combined.
  6. Turn the dough out onto a lightly floured surface and knead gently. Pat into an 8-inch circle and cut into 8 wedges.
  7. Place the wedges onto the prepared baking sheet. Bake for 18-20 minutes or until golden brown.
  8. Let cool slightly before serving.
