Ingredients 

Main Ingredients

  • 2 cups broccoli florets
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 cups vegetable broth
  • 1 cup milk
  • 2 tablespoon butter
  • Salt and pepper to taste

Instructions 

  1. In a pot, melt butter over medium heat. Add onion and garlic, cook until soft.
  2. Add broccoli and vegetable broth. Bring to a boil, then reduce heat and simmer until broccoli is tender.
  3. Use an immersion blender to puree the soup until smooth.
  4. Stir in milk, and season with salt and pepper. Heat through, but do not boil.
