Crème Brûlée Recipe

Ingredients 

Main Ingredients

  • 2 cups heavy cream
  • 1 whole vanilla bean split and scraped
  • 5 large egg yolks
  • ½ cup granulated sugar
  • ¼ cup granulated sugar for caramelizing

Instructions 

  1. Preheat oven to 325°F (160°C).
  2. In a saucepan, heat the cream and vanilla bean until just boiling. Remove from heat and let sit for 15 minutes. Remove the vanilla bean.
  3. In a bowl, whisk together the egg yolks and ½ cup sugar until pale and thick.
  4. Slowly pour the cream into the egg mixture, whisking constantly.
  5. Pour the mixture into ramekins and place them in a baking dish. Fill the dish with hot water halfway up the sides of the ramekins.
  6. Bake for 30-35 minutes, until the custard is set but still jiggly in the center.
  7. Remove from the oven and let cool. Refrigerate for at least 2 hours.
  8. Before serving, sprinkle ¼ cup sugar evenly over the tops and caramelize with a blowtorch.
