Ingredients

  • 4 Eggs large
  • 1 cup Breadcrumbs
  • 1 cup Flour
  • 1 cup Vegetable Oil for frying
  • 1 pinch Salt to taste
  • 1 pinch Pepper to taste

Instructions 

  1. 1. Bring a pot of water to a simmer. Add a splash of vinegar.
  2. 2. Crack the eggs into separate small bowls.
  3. 3. Gently slide the eggs into the simmering water and poach for about 3 minutes.
  4. 4. Remove the eggs with a slotted spoon and place on paper towels to drain.
  5. 5. Coat the poached eggs in flour, then dip in beaten egg, and finally coat with breadcrumbs.
  6. 6. Heat the vegetable oil in a frying pan over medium heat.
  7. 7. Fry the coated eggs until golden brown and crispy, about 2 minutes per side.
  8. 8. Remove and drain on paper towels. Season with salt and pepper to taste.
