  • 1 tablespoon Lemon Juice
  • 1 pinch Salt
  • 1 pinch Black Pepper freshly ground

Instructions 

  1. 1. Use a vegetable peeler to slice the cucumber into long, thin strips.
  2. 2. In a bowl, mash the avocados with lemon juice, salt, and black pepper until smooth.
  3. 3. Place a small amount of the avocado mixture at one end of a cucumber strip and roll it up.
  4. 4. Repeat with the remaining cucumber strips and avocado mixture.
  5. 5. Serve immediately or chill for a bit before serving.
