Ingredients 

Main Ingredients

  • 1 lb Shrimp, peeled and deveined
  • 1 tablespoon Olive oil
  • 1 cup Coconut milk
  • 2 tablespoon Curry powder
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 tablespoon Lime juice
  • 2 tablespoon Fresh cilantro, chopped

Instructions 

  1. 1. Heat the olive oil in a skillet over medium heat.
  2. 2. Add the chopped onion and minced garlic. Sauté until the onion is translucent.
  3. 3. Stir in the curry powder and cook for another minute.
  4. 4. Pour in the coconut milk and bring to a simmer.
  5. 5. Add the shrimp, salt, and black pepper. Cook until the shrimp is pink and cooked through, about 5-7 minutes.
  6. 6. Stir in the lime juice and chopped cilantro. Serve hot.
