Date Nut Bread

Main Ingredients
- 1 cup dates, chopped
- 1 cup boiling water
- 1 teaspoon baking soda
- ½ cup butter, softened
- 1 cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 ½ cups all-purpose flour
- 1 cup chopped nuts (walnuts or pecans)
Preheat your oven to 350°F (175°C). Grease a loaf pan.
In a bowl, combine the chopped dates, boiling water, and baking soda. Let it sit for 10 minutes.
In another bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla.
Stir in the date mixture. Add the flour and mix until just combined. Fold in the chopped nuts.
Pour the batter into the prepared loaf pan. Bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
