  • ¼ cup Milk
  • ½ cup Cheese, shredded
  • ¼ cup Bell Peppers, diced
  • ¼ cup Spinach, chopped
  • to taste Salt and Pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, beat the eggs and milk together.
  3. Add the cheese, bell peppers, spinach, salt, and pepper. Mix well.
  4. Pour the mixture into a greased muffin tin, filling each cup about ¾ full.
  5. Bake for 20 minutes or until the egg cupcakes are set and lightly golden.
  6. Let them cool for a few minutes before removing from the tin. Serve warm.
