Eggplant Pizzas Recipe

Main Ingredients
- 2 large eggplants
- 1 cup tomato sauce
- 1 cup shredded mozzarella cheese
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 tablespoon olive oil
- to taste salt and pepper
Preheat your oven to 400°F (200°C).
Slice the eggplants into ½ inch thick rounds.
Brush both sides with olive oil and place on a baking sheet.
Bake for 15 minutes, flipping halfway through.
Remove from oven, spread tomato sauce on each slice, and sprinkle with cheese, oregano, and basil.
Return to oven and bake for another 5 minutes or until cheese is melted and bubbly.
Season with salt and pepper to taste. Serve hot.
