  • 4 eggs
  • 2 slices bread toasted
  • 1 cup tomato sauce
  • 1 green bell pepper chopped
  • 1 onion chopped
  • 1 clove garlic minced
  • 1 teaspoon Creole seasoning
  • 1 tablespoon olive oil

Instructions 

  1. Heat olive oil in a skillet over medium heat.
  2. Add chopped bell pepper, onion, and garlic. Sauté until soft.
  3. Pour in tomato sauce and add Creole seasoning. Simmer for 5 minutes.
  4. Crack eggs into the skillet and cook until whites are set but yolks are still runny.
  5. Toast the bread slices.
  6. Place eggs and sauce over the toasted bread. Serve immediately.
