Instructions
Heat olive oil in a skillet over medium heat.
Add chopped bell pepper, onion, and garlic. Sauté until soft.
Pour in tomato sauce and add Creole seasoning. Simmer for 5 minutes.
Crack eggs into the skillet and cook until whites are set but yolks are still runny.
Toast the bread slices.
Place eggs and sauce over the toasted bread. Serve immediately.
