Ingredients 

Main Ingredients

  • 2 cups Egusi (melon seeds) ground
  • 1 cup Palm oil
  • 1 lb Assorted meats (beef, tripe, goat) cut into pieces
  • 2 cups Stock or water
  • 1 cup Chopped spinach or bitterleaf
  • 1 Large onion chopped
  • 3 cloves Garlic minced
  • 2 Bell peppers chopped
  • 1 tablespoon Ground crayfish
  • to taste Salt
  • to taste Pepper

Instructions 

  1. 1. Blend the egusi seeds until smooth and set aside.
  2. 2. Heat the palm oil in a large pot over medium heat. Add the chopped onions and sauté until translucent.
  3. 3. Add the minced garlic and chopped bell peppers. Cook for another 5 minutes.
  4. 4. Add the assorted meats and cook until browned.
  5. 5. Pour in the stock or water and bring to a boil. Reduce heat and simmer for 20 minutes.
  6. 6. Stir in the ground egusi and cook for another 10 minutes, stirring occasionally.
  7. 7. Add the chopped spinach or bitterleaf, ground crayfish, salt, and pepper. Simmer for another 5 minutes.
  8. 8. Serve hot with fufu, pounded yam, or rice.
