Ingredients

  • 1 kg Beef roast preferably rib or sirloin
  • 2 tablespoon Olive oil
  • 2 teaspoon Salt
  • 1 teaspoon Black pepper freshly ground
  • 2 cloves Garlic minced
  • 1 tablespoon Rosemary chopped

Instructions 

  1. Preheat your oven to 220°C (425°F).
  2. Rub the beef roast with olive oil, salt, pepper, garlic, and rosemary.
  3. Place the beef in a roasting pan and put it in the oven.
  4. Roast for 20 minutes, then reduce the temperature to 180°C (350°F) and continue roasting for 70 minutes.
  5. Check the internal temperature with a meat thermometer. It should read 55°C (130°F) for medium-rare.
  6. Remove from the oven and let it rest for 15 minutes before carving.
