Instructions
Preheat your oven to 220°C (425°F).
Rub the beef roast with olive oil, salt, pepper, garlic, and rosemary.
Place the beef in a roasting pan and put it in the oven.
Roast for 20 minutes, then reduce the temperature to 180°C (350°F) and continue roasting for 70 minutes.
Check the internal temperature with a meat thermometer. It should read 55°C (130°F) for medium-rare.
Remove from the oven and let it rest for 15 minutes before carving.
