Escarole and Beans Recipe
A simple and hearty dish featuring escarole and beans.

Main Ingredients
- 2 tablespoon olive oil
- 3 cloves garlic, minced
- 1 head escarole, chopped
- 2 cans cannellini beans, drained and rinsed
- 4 cups vegetable broth
- to taste salt and pepper
Heat olive oil in a large pot over medium heat.
Add minced garlic and sauté until fragrant, about 1-2 minutes.
Add chopped escarole and cook until wilted, about 5 minutes.
Add cannellini beans and vegetable broth. Bring to a simmer.
Season with salt and pepper to taste. Simmer for 10 minutes.
Serve hot.
