Ingredients 

Main Ingredients

  • 1 lb black beans soaked overnight
  • 1 lb pork shoulder cut into chunks
  • 1 lb beef chuck cut into chunks
  • 1 smoked sausage sliced
  • 1 onion chopped
  • 4 cloves garlic minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • to taste salt
  • to taste black pepper
  • 6 cups water

Instructions 

  1. 1. In a large pot, heat some oil over medium heat. Add the chopped onion and minced garlic, and cook until softened.
  2. 2. Add the pork shoulder, beef chuck, and smoked sausage to the pot. Cook until browned on all sides.
  3. 3. Add the soaked black beans, bay leaves, cumin, and paprika to the pot. Stir to combine.
  4. 4. Pour in the water and bring the mixture to a boil. Reduce the heat to low, cover, and simmer for about 2 hours, or until the beans and meat are tender.
  5. 5. Season with salt and black pepper to taste. Remove the bay leaves before serving.
  6. 6. Serve hot with rice, collard greens, and orange slices.
