Ingredients 

Vegetables

  • 2 cups broccoli florets
  • 2 cups cauliflower florets
  • 1 cup baby carrots
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 4 cloves garlic, minced
  • 2 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, combine all vegetables and garlic.
  3. Drizzle with olive oil and sprinkle with thyme, rosemary, salt, and pepper. Toss to coat.
  4. Spread vegetables in a single layer on a baking sheet.
  5. Roast in preheated oven for 30 minutes, stirring halfway through, until vegetables are tender and lightly browned.
