Garlic Parmesan Spaghetti Squash Recipe

- 1 large Spaghetti Squash
- 2 tablespoons Olive Oil
- 3 cloves Garlic, minced
- ½ cup Grated Parmesan Cheese
- to taste Salt and Pepper
- 2 tablespoons Chopped Fresh Parsley
Preheat your oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds.
Drizzle the cut sides of the squash with olive oil and season with salt and pepper. Place them cut side down on a baking sheet.
Roast in the preheated oven for about 40 minutes, or until the squash is tender and easily pierced with a fork.
Remove from the oven and let it cool slightly. Use a fork to scrape out the strands of squash into a mixing bowl.
In a small pan, heat the remaining olive oil over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.
Pour the garlic and oil over the spaghetti squash strands. Add the grated Parmesan cheese and chopped parsley. Toss to combine.
Season with additional salt and pepper if needed. Serve warm.
