Ingredients 

Crust

  • 1 ½ cups Gingerbread cookie crumbs
  • ¼ cup Melted butter

Filling

  • 24 oz Cream cheese softened
  • 1 cup Granulated sugar
  • 1 cup Sour cream
  • 3 Eggs
  • ¼ cup Molasses
  • 1 teaspoon Ground ginger
  • 1 teaspoon Ground cinnamon
  • ¼ teaspoon Ground cloves
  • ¼ teaspoon Ground nutmeg

Instructions 

  1. Preheat oven to 325°F (163°C).
  2. Mix gingerbread cookie crumbs and melted butter. Press into the bottom of a springform pan.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add sour cream, eggs, molasses, and spices. Mix until well combined.
  4. Pour filling over crust. Bake for 60 minutes or until center is set. Cool completely before serving.
